PUDDING: BALSAMIC STRAWBERRIES

Pudding: Balsamic strawberries
SERVES 2
PREPARATION 5 MINS
COOKING 30-60 MINS TO MARINADE
300g (10oz) strawberries
1 tablespoon caster sugar
1 tablespoon of balsamic vinegar
2 tablespoons roughly chopped fresh mint.

Vanilla ice cream to serve
1. Hull and halve the strawberries and place them in a bowl.
2. Sprinkle with the caster sugar and balsamic vinegar and gently mix.
3. Set aside to marinate for 30-60 minutes. Taste and add a little extra vinegar if desired.
4. Sprinkle with the roughly chopped fresh mint. Serve the strawberries and any juice with vanilla ice cream.
