FISH: CRISPY SKINNED SALMON

Fish: Crispy skinned salmon

1 salmon fillet
Olive oil
Balsamic vinegar
Houmous
2 tomatoes
1. Heat a little olive oil in a non-stick frying pan over a high heat
2. Season a salmon fillet with salt and freshly ground black pepper
3. Add the fillet to the hot pan and cook, skin-side down, for 3 minutes or until the skin is crisp. Turn and cook the other side for 2 minutes

TIP

Serve with a dollop of houmous and a tomato salad made by dressing slices of tomato in a little olive oil and balsamic vinegar.
