PUDDING: ETON MESS

Pudding: Eton mess
SERVES 4
PREPARATION 10 MINS
COOKING 20 MINS TO CHILL
450g (14oz) strawberries
2 tablespoons icing sugar
375ml (12fl oz) whipping cream
6 small meringues

Optional: 1 tablespoon flavoured brandy
1. Hull and roughly chop the strawberries. Sprinkle over the icing sugar and, if desired, the flavoured brandy.
2. Chill for 20 minutes. In the meantime, whip the cream until it forms soft peaks.
3. Fold the whipped cream into the strawberries and juice. Break the meringues into bite-size pieces and fold into the mixture.
4. Serve immediately, in small bowls or large wine glasses.
