FISH: SALMON FRITTERS

Fish: Salmon fritters
SERVES 1

COOKING 5 MINS
1 large salmon fillet, approx 250g (8oz)
1 egg
100g (3½oz) self-raising flour
2tbsp of plain natural yoghurt
1 small courgette, grated
4 spring onions, sliced
3tbsp chives, chopped
Grated zest of 1 lemon
1. Whisk the egg with the self-raising flour and plain natural yoghurt in a bowl
2. Chop up the raw salmon and add to the egg, flour and yoghurt mix
3. Stir in the grated courgette, sliced spring onions, chopped chives and the grated lemon zest
4. Season well, then fry heaped tablespoons of the mixture in batches in a little oil in a large frying pan, until golden on both sides

TIP

Serve warm with salad
