1 cabbage, core removed
3tbsp olive oil
4 rashers bacon, sliced
2 cloves garlic, crushed
1 long red chilli, chopped and seeds removed
1. Shred the cabbage into thin slices. Heat the oil in a large saucepan or deep frying pan over a medium heat. Add the bacon, garlic and chilli and sauté for 3 minutes (don't let the garlic burn). Add the sliced cabbage and stir-fry for about 4 minutes, or until softened.
2. Add 3tbsp water to the pan and put on the lid. Reduce the heat a little and cook for 5-7 minutes, or until softened, but still with a slight crunch. Season to taste.
TIP
Don't throw away the outside leaves of the cabbage - they're delicious and add a good green colour. Shred them, too, and start to cook them about 1 minute before adding the paler leaves.
