250g (8oz) chopped tomatoes
250g (8oz) peeled
and diced cucumber
120g (4oz) finely diced red onion
2 deseeded and finely chopped long green chillies
3tbsp fresh lemon juice
2tbsp roughly chopped fresh
coriander leaves
Pinch caster sugar
Drizzle of olive oil
Salt & pepper
1. Combine the tomatoes, cucumber, red onion, chillies, lemon juice,
coriander leaves and a pinch of caster sugar in a large bowl.
2. Drizzle with a little olive oil and season well.
